It’s about this time of year that I start seriously craving strawberries. I have no doubt this stems from my childhood obsession with this sweet red fruit. My grandmother would slice up tons of strawberries, sprinkle them with sugar, and have them waiting for me to snack on at any given moment. Honestly, I don’t think I had ever had a strawberry that did not have sugar on it before the age of 10. So many of my favorite memories with my grandma involve various kinds of food, and this recipe is definitely a tribute to her supplying my demand for strawberries from a very young age. While for the longest time, my grandmother was my rock, it’s time for me to be hers. In a little over a week she’ll be undergoing a very major surgery, and you bet I’m going to be right there by her side through the entire process- figuratively, not literally.
This sweet little recipe is going to come in super handy for the mornings I need a quick bite before having to rush off to the hospital to be with her, and all of the long days when I get home and want something sweet, but nothing too unhealthy.
Strawberries are just coming in to season and they are so delicious right now. These Strawberry Oatmeal Bars are the perfect bake ahead breakfast, or even the perfect after dinner sweet snack!
