Happy national caramel apple day y’all! Ha, bet you didn’t see that one coming! Not a lot of people know that October 31st is also known as national caramel apple day! Since I’m not so big on Halloween, I thought I’d celebrate today was a tasty recipe to celebrate the holiday that graces the 31st of October.
My idea came about a few weeks ago when Thomas’ mom showed us her Whole Foods find of the week- apples stuffed with nuts and other goodies! We baked them and were in love! They were so delicious, but they were missing something…. I wanted to recreate them so badly, but I just couldn’t figure out what it was the apples needed.
Once I realized October 31st was also National Caramel Apple Day, I just knew I had to recreate the stuffed apples we had, but make them even better! So that’s what we set out to do. Thomas and I cleared our Sunday afternoon, and headed to his mom’s house in hopes of creating a delicious treat!
Ingredients:
6 Apples (5 filled 1 cut up)
Packaged caramel squares
Lemon juice
1/2 cup quick oats
2 tbsp butter
1/4 cup brown sugar
Dash of cinnamon
Pecans (optional)
Directions:
Heat oven to 400° F
Wash apples and slice top off of apples
Use a spoon to scoop out core and inside area of apple. You want the apple to resemble a bowl.
Place butter in microwave safe dish and heat until soft.
Add quick oats and brown sugar to softened butter and mix. Set mix aside.
Place apples face down in a glass dish with water. Microwave for 3 minutes or until apples are slightly tender.
While apples are heating, dice remaining apple, sprinkle with cinnamon, lemon juice and pecans.
Place apples on a lined baking sheet or cake pan, face up.
Fill with halfway with apple mixture, add in caramels and fill remaining space with apple mixture.
Top with Oat mixture.
Bake for 10 minutes, or until oats are crisp.
Add caramel(s) to the top and bake another 5 minutes.
Let cool & enjoy!
These sweet treats came out better than I ever could imagined! They were the perfect amount of crispy, caramel, apple goodness!
